.bye, bye miss american pie.

To all my readers who celebrate July 4th I hope you're having a safe and awesome day!


I made a little something special to celebrate. What says "America" more than cool whip, strawberries and blueberries? Am I right? I whipped up this little pie in about 10 minutes.

Easy Peasy Berry Pie serves 6-8
1 package cheesecake pudding mix
1 1/2 cups milk
Roughly 1 cup of strawberries, sliced
Roughly 1 cup blueberries
1 graham cracker crust (I used a store bought crust)
1 tub of cool whip

Whisk the pudding mix, milk and about a cup of cool whip together. You can either put this straight into the pie crust, or you can put a few berries on the bottom of the crust beforehand. I did a layer of blueberries. Then put the pudding mixture, you will probably not use all of it. Then add a layer of cool whip on top. Decorate with the berries. Place in the fridge for a couple of hours, if you can be that patient. Serve!

Extra filling, FTW
Yeah, easiest thing ever. As tough as it is to wait for the pie to set, you should have some extra filling to "taste test," at least that's what I called it when I ate a cup of pudding. This pie was pretty delicious, but I will say I was disappointed in the blueberries I got. They didn't taste completely ripe. You can substitute any fruit you prefer for this pie but, in honor of America strawberries and blueberries were the obvious choice for today.
